Yummy Cookies



Garlic Olive Oil

I like to buy garlic olive oil, but I was thinking that I could probably make it for less.  So I decided to try it.  Here is the recipe that I tried and I think it turned out pretty well. 
Ingredients:
Head of garlic
Olive Oil


Smash and peel all the cloves of garlic from the head of garlic.  Put 1 cup of oil for every head of garlic in a sucepan. 
 
 
Heat over a medium low heat until bubbles form around garlic.  Cook for about 15 minutes on a low heat, removing from heat if cloves start to brown.  Do not let them get too dark because the garlic can get bitter and ruin the oil.    
Let the oil sit and cool for about 45 minutes and pour into container
 
 
 Do not put the cloves in with the oil.  Keep them seperate.  They are flavorful and can be used in other recipes.  I will be using them for a white pizza I am making.

Pancake Muffins

I have been working on several projects that I will be posting over the next few days.  Because of my work schedule, I try to make food that I can freeze or package and eat throughout the week or beyond.  This week I made pancake muffins.  It is a really easy recipe that works for several different toppings.  These are also freezable which makes them great!
 
The following ingredients are needed:
Pancake mix
Syrup
Toppings
 
I chose to use sausage (cooked) because I had some in the freezer and needed to use it.  I have also used bacon (also cooked) before, but you could also add bananas, blueberries, or other fruit toppings.
 
 
Preheat the oven to 350 degrees.  I made the pancake mix according to the package except I put in a quarter cup of syrup in place of part of the water needed to mix it. 
 
 
The biggest mistake I made this time that I made this recipe is that I used cupcake liners. 
DO NOT USE CUPCAKE LINERS!!!
I made the mistake and they stick to them and I lose half my pancake muffin each time I try to peel it off.  Spray the muffin tins  and fill them about 3/4 full.
 
 
Add your toppings.
 
 
Cook for 12 - 14 minutes and enjoy.  You can freeze them and enjoy them at anytime.  I added the syrup to the batter so that I would not have to add it at this point.  I heat them in the microwave for 30 seconds and eat them on the way to work.  They are a great way to enjoy breakfast on the go!  Hope you enjoy the recipe.  I will catch you later!

German Pancakes or Eirkuchen

It has been a long time since I have been here, but I am ready to start this project again.  It will have to be a little different because My job has changed and Monday through Thursday I will not be doing any projects because I am at work 11 hours a day.  I am only home to sleep, eat and take care of the family.  However, Saturday and Sunday are my project days, but I will make enough stuff to post several times during the week maybe even every day. 

I am going back to my heritage today and making a recipe I found.  They are different than regular pancakes.  They are eggy and light and puff up into fun shapes.  You will need the following ingredients:

6 eggs
1 cup milk (I used skim lactose free)
1 cup flour
1/4 teaspoon salt
powdered sugar (optional)
lemon juice (optional)
syrup (optional)

Preheat oven to 425 degrees.  Spray muffin tin with cooking spray to prevent sticking.  Mix the eggs, milk, flour and salt together. 

 
Don't beat it to death.  You want lumpy batter.



Fill each muffin cup about 3/4 of the way full and put in the oven.
 
 
Bake for 18-20 minutes.  I put mine in for 20 minutes and I think they were a little dark so just be careful with them.  They still tasted wonderful.
 
 
They are easy and they taste terrific.  I tried mine two ways.  I had the first one with a little lemon juice and powdered sugar sprinkled on top.
 
 
The second one with sugar free syrup.
 
 
I preferred the the lemon juice and powdered  sugar, but they were both good.  I have extras and I am going to try and freeze them to see if they are any good.  I'll let you know what happens.   Bye for now!!
